Chicken Soborodon

This is a quick and easy recipe for a slightly sweet soboro (minced food) don (rice bowl served with toppings).

This dish features delicious chicken, softly sweet egg, and crisp snow peas. Both chicken and egg soboro can be made ahead and kept in the fridge, making this simple dish even quicker!
Eggs . . . 2
Minced chicken . . . 180g
Snow peas . . . 30g
Vegetable oil . . . 2 teaspoons
Sugar . . . 1/2 teaspoon
Sesame oil . . . 1 teaspoon
(A) Dashi broth . . . 1/2 cup
(A) Soy sauce . . . 2 teaspoons
(A) Sake  . . . 2 teaspoons
(A) Grated ginger . . . 1/2 teaspoon
Mix the eggs in a small bowl together with the sugar.
Remove the strings from the snow peas and diagonally slice each one into thirds.

Step 1

Heat up a frying pan and add the vegetable oil. Pour in the egg mix and scramble, then remove from pan. In the same pan, stir-fry the minced chicken along with (A) and cook until the liquid has evaporated.

Step 2

Quickly boil the snow peas (1-2 minutes) then drain. Dress with the sesame oil.

Step 3

Fill two bowls with rice and top with chicken, egg and peas. Enjoy!
